Blueberry Streusel Muffins

Try these Blueberry Streusel muffins today - a great start to the morning!





1 1/2 C Flour
1/2 C Sugar
1 t Baking Powder
1 t Baking Soda
1/2 t Salt
1 C Milk (I use skim)
1 egg (Large)
1/3 C Melted Butter
1 C Fresh Blueberries


Topping:
1/2 C Brown Sugar
1 T Flour
1 t Cinnamon
1 T  Butter ( Cold)

Preheat oven to 400*.   In a mixing bowl, cream the sugar &  butter.  Add egg, mix again.  Start adding flour, baking powder, baking soda and salt, start adding milk & vanilla - mix thoroughly.  Add blueberries, fold in by hand.  In a Polish Pottery Muffin Baker, either spray with cooking spray or use paper liners, fill 2/3 full.  In a separate bowl, add sugar, flour, cinnamon and cut in the butter.  With a fork, mix until crumbly.  Sprinkle over the muffins.  Bake for 15 minutes or until browned.
