Sausage Stuffing

I don't know about you, but I love stuffing - to me there is no better comfort foods then stuffing, mashed potatoes and gravy!  This is my mother in laws stuffing recipe with a few of my own tweeks, I hope you like it as much as we do. 

Sausage Stuffing

1 lb Sage Flavored Breakfast Sausage
3/4 C Diced Onion
1 1/2 C Diced Celery
3/4 C melted butter
8 C. bread cubes
1/4 t pepper
1 t Thyme
1 T dried Parsley
1 14 ounce can Chicken Broth
2 pears – peeled and diced
2 apples – peeled and diced (Granny Smith or Mcintosh are my favorites)
1/2 C Dried Cranberries

Preheat oven to 350.  Saute celery and onions in 1 T of butter until tender, remove from pan, put in large mixing bowl.  Brown sausage – add to mixing bowl.  Add remaining ingredients, mix to coat.  Place in a large baking dish (I like my Polish Pottery Cake Pan), cover and bake 25 minutes.  Remove cover and bake an additional 15 minutes or until top is browned.
