Apple Crisp

6 C Apples (I like to mix Honeycrisp & Granny Smith) - Sliced
1 C Sugar
1 t Cinnamon
1 t Vanilla

Topping:
3/4 C Flour
1/2 C Butter - Cold
1/2 C Brown Sugar
1 t Cinnamon (may omit - I like cinnamon)
Optional:  Quick Oats (the picture below, I added 1/2 C quick oats) 

Preheat oven to 375*.    In a bowl place sliced & peeled apples, add sugar, cinnamon & vanilla.  Stir until coated.  Pour into a greased 9" square baking dish.  In another bowl, put flour, brown sugar, cinnamon, cut in the cold butter until crumbly.  I use a pastry blender to make it crumbly.  Sprinkle over the apples.  Bake for 40 - 45 minutes or until golden brown and bubbly.  Serve warm with vanilla ice cream or cream - both ways are delicious!!
