Fruit Pizza
Tasty & Beautiful.
Crust:
1 1/2 C Flour
1 C Powdered Sugar
3/4 C Butter (softened)
Filling:
8 ounce Cream Cheese (Softened)
1/2 C Sugar
1 t Vanilla
Glaze:
1 C Orange Juice
1 t Lemon Juice
3/4 C reserved fruit juice (pineapple, mandarin orange, peach)
3 T Cornstarch
1/4 C Sugar
Variety of fruit: Strawberries, Blueberries, Raspberries, Mandarin Oranges, Pineapple, Kiwi Fruit, Bananas, peaches etc.
Preheat oven to 350*. Mix crust ingredients together in a bowl. Pat into a pizza pan or baking sheet (I used my Polish Pottery Cutting Board). Bake for 12 - 15 minutes. Remove and cool on a wire rack. After the crust has cooled, mix the filling ingredients until smooth and creamy. Spread over entire crust. Arrange a variety of fruit to cover the filling. This is fun for the kids to make different designs and patterns. In a saucepan, add the glaze ingredients. Bring to a boil and continue to boil for 2 minutes, stirring constantly. Remove from heat and let cool. After the glaze has cooled, spread over the fruit and chill for an hour or two.
