Ranch Chicken & Rice

Ranch Chicken & Rice is healthy, easy and kid-friendly - what more could you ask for?
2 C Instant Brown Rice
1 lb skinless, boneless chicken breast (you can either cut into strips or leave whole)
1 package Hidden Valley Ranch Dressing Mix
1 C Milk (I prefer Skim)
2 C Water
1/2 C Butter - melted
Fresh Ground Pepper (to taste)

Preheat oven to 375.  Lightly grease the bottom of a 9 x 12 cake pan.  Spread the brown rice on bottom of pan.  Top with chicken breasts - then sprinkle ranch dressing mix over the top.  Add milk and water to pan.  Drizzle with melted butter.  Bake uncovered at 375 for 35 minutes, reduce heat to 350 and bake an additional 10 minutes.  Let sit for 5 minutes before serving.  Serves 4.
