Cinnamon Sugar Tortilla Chips & Applesauce
If you haven't already guessed, Cinnamon is one my favorites! This is a recipe that I made quite often while my husband & I lived in Poland. It is great for an after school snack for your kids too. I hope you enjoy the Cinnamon Sugar Tortilla Chips & Applesauce!

Cinnamon Sugar Tortilla Chips
1 package Tortillas (I like the Carb Balance ones)
1/4 C sugar
3 - 4 t Cinnamon (depending on taste)
Cooking Spray (I prefer Pam)
Preheat oven to 400. In a small mixing bowl combine the sugar and cinnamon. Separate the tortillas, spray each side lightly with cooking spray. On a plate, lay the sprayed tortilla, dust with sugar & cinnamon mixture on each side. Cut into quarters, place on baking sheet. Bake for 6 minutes or until crisp. These are delicious, healthy and fun to dip with the applesauce or a sweet salsa.
Homemade Applesauce
My grandmother made applesauce often, I think it is what kept her alive to the ripe old age of 94, she was healthy, happy and a wonderful cook up until the day she died. Every time I make applesauce for my family, I think of her.

2 Granny Smith Apples
4 Large Delicious Apples
1/4 C Sugar (Add more or less depending on your taste)
2 t Cinnamon
1 t Vanilla
Peel, core and cube the apples. Place in a medium sauce pan, add 1 C of water, bring to a boil over medium heat. Boil for 5 minutes - covered. Remove cover and add sugar, cinnamon, vanilla - replace cover and continue boiling on medium low for 15 minutes. Remove cover and cook for 5 for minutes. Let cool, serve with Cinnamon Sugar Tortilla Chips.
