Orange Carrot Cookies
Looking for a way to sneak another vegetable in to your child? How about a cookie? My Mom used t make Orange Carrot Cookies when we were kids. I hope you enjoy them as much as we do!
1 C Shortening (I like the butter flavored Crisco)
1 C Sugar
1 Egg
1/4 t salt
1 t Baking Powder
2 C Flour
2 T Orange Juice
1 T Grated Orange Rind
1 Jar Baby Food - Carrots (You can also used mashed cooked carrots - approx 1/4 C)
1 t Vanilla
Frosting: 2 T orange juice and powdered sugar. You may add additional grated orange rind.
Preheat oven to 400. Cream together shortening & sugar. Then add the egg, orange juice & rind. Beat until smooth. Add dry ingredients - Flour, salt, baking powder. Finally - add the jar of carrots & vanilla. Drop by teaspoon full onto baking sheet. Bake for 12 minutes or until edges are browned. After the cookies have cooled, frost.
