Mini Cheesecakes

Dessert for one, great for dinner parties, after an evening meal - well, really anytime!  Try this super easy Cheesecake recipe featuring our Polish Pottery Ramekins!

1/2 C Crushed Graham crackers
1/4 C flaked coconut (may omit)
2 T butter - melted
 8 oz package Cream Cheese
1 t Vanilla
1/3 C Sugar
1 egg, lightly beaten

Preaheat oven to 350.  Mix graham crackers, coconut & butter, press lightly into the bottom of 4 ramekins.  In another bowl add cream cheese, vanilla, sugar and egg.  Mix until creamy.  Divide equally between the 4 ramekins.  Bake for 15 - 20 minutes or until center is set.  Let cool.  May refrigerate for an hour.  The fun part is that everyone can top their own cheesecakes with their favorite topping, berries, chocolate sauce, carmel sauce etc.  Serves 4

      Thank you for the comment.  I have those same ramekins, just haven't loaded them onto the website yet.  They could be finger bowls, but I assume they are just another variety of ramekins.  I will plan on loading them to the website this weekend.
