Sweet Pasta Salad - Emily's Salad
This is one of my favorite salads, in our family it is known as "Emily's Salad" - I don't really know if it has a real name or not, but try it, hopefully it will be come a favorite in your house too.
2 7 ounce boxes of Creamette Ring Macaroni (This brand is not available everywhere, any ring or small pasta will work)
1 or 2 Green Peppers - depending on how much you like Green Peppers
5 Grated Carrots
1 pint Heilmans or Best Foods Mayonaise (2 cups)
1 1/2 C Sugar
3/4 C Vinegar
1 can Eagle Brand Sweetened Condensed Milk
Boil the noodles for approximately 8 minutes to cook. Drain, put in large mixing bowl, add green peppers and carrots. In another mixing bowl add mayo, sugar, vinegar & milk, beat on medium speed until smooth. Pour over pasta, carrots, green peppers and stir. Store in refrigerator overnight. This makes a large batch, perfect for get together with family or friends. Enjoy.

Yumm, this sounds delicious and familiar. Will have to ask my parents if they know the name of it. But I believe our family version had Polish Dill Pickles in it. I will find out and let you know. Sounds tasty.
