Fruit Juice Knox Blox
When I was a kid, my mom used to make Knox Blox, Jello blocks, we loved eating finger food. I decided to make these for my boys a couple of days ago - they demolished it so quickly I didn't even get a picture! Fun and easy snack.
4 envelopes of Knox Gelatine (found in the Jello aisle in the grocery store)
1 C cold Fruit Juice - any flavor will work, we used Berry Juice
3 C hot Fruit Juice
2 T sugar or honey (may omit)
In a bowl pour 1 C cold juice, sprinkle the 4 envelopes of Knox Gelatine on top. Let sit for 1 minute. Heat 3 C juice to boiling, pour into same bowl as Gelatine and cold juice. Add honey or sugar if desired. Pour into a 8 x 10 pan, place in refrigerator for a few hours until set. Cut into cubes and serve as finger food.
