Pork Chops & Stuffing

I LOVE comfort food!  I grew up on a farm, so needless to say we ate very hearty, comforting meals.  Sometimes, there just isn't anything better in life then mashed potatoes, stuffing, fried chicken etc.  So today's recipe was a hit in my household full of boys last week.  I hope you enjoy it too!

4 Pork Chops ( like thicker Pork Loin Chops)
2 T Butter
1 small onion - chopped
1 t Garlic - chopped
3 C Bread Cubes
1/4 C Vegetable Broth
1/2 C. Celery - Chopped  
1/4 C Butter - Melted
1 t Sage
1 C Cream of Chicken Soup (I use Low Sodium)
1/2 C. Vegetable Broth or Water

Preheat oven to 325.  In a skillet, brown the pork chops in 2 T butter.  Add a dash of Salt & pepper, or your favorite seasoning.  In a bowl, add the onion, bread cubes, vegetable broth, celery, butter, sage & garlic, mix until moistened.  After the pork chops are browned, place in the bottom of your polish pottery baking dish.  Cover the pork chops with the stuffing mixture.  In a bowl, mix the soup and vegetable broth (or water), pour this on top of the stuffing.  Cover and bake for 1 hour, remove cover and bake for an additional 15 - 20 minutes.  Serve with warm dinner rolls.  Wonderful filling meal, easy and delicious!
