Scalloped Cabbage

While my husband & I lived in Warsaw, I cooked quite often with Cabbage.  This was one of our favorite recipes

1 head of cabbage - chopped
3 - 4 T Butter
3 - 4 T Flour
1 1/2 C Milk
2 C American Cheese - Grated
Dash of Pepper
Bread Crumbs

Preheat oven to 350.  Take the chopped cabbage and place in pot of boiling water.  Lower temp to low and simmer for 15 minutes.  Drain and set aside.  Make a white sauce by combining butter, four and milk.  Stir.  Add cheese and cook over low heat until cheese is melted and smooth (this can also be done in the microwave).  In a Polish Pottery baking pan, layer the cabbage, then cheese sauce until all is used.  Top with bread crumbs.  Bake for 25 - 30 minutes or until the top is golden brown.
