Reuben Dip
Do you like Reuben's? Then this is the dip for you.
1 8 ounce package of Cream Cheese - softened
1/2 C Sour Cream
2 T Ketchup
1/2 lb deli Corned Beef, finely chopped
1 C Sauerkraut, chopped, rinsed and drained
1 C Shredded Swiss Cheese
2 T Finely Chopped Onion
Preheat oven to 350. In a mixing bowl, beat cream cheese, sour cream & ketchup until smooth. Stir in corned beef, saurerkraut, cheese and onion. Put it in a 1 quart Polish Pottery baking dish and bake covered for 30 minutes. Uncover and bake 5 minutes more or until bubbly. Serve warm on snack rye bread or crackers. Makes about 3 cups.
