Mandarin Orange Cake
This is a super easy and tasty cake!
2 C Sugar
2 C Flour
2 Large Eggs
2 t Baking Soda
1 t Salt
1 t Vanilla
2 11 ounce cans of Mandarin Oranges
Cool Whip
1 orange for zest (may omit)
Preheat oven to 325 degrees. Put all ingredients in a bowl and beat very well - approximately 2 minutes. Spray a cake pan with cooking spray. Pour into the cake pan and bake for 40 - 45 minutes. After the cake has cooled, Top with Cool Whip and zest of 1 orange. Keep in the refrigerator.
