Mom's Meatloaf

I come from a long line of excellent cooks - my Mom being one of them.  We are not gourmet cooks, we are comfort food cooks.  My Mom's meatloaf is one of my favorites and always has been.  I hope you like it too.

1 1/2 lb Hamburger
1 small onion - chopped (set aside a few for the top)
1/4 C Ketchup
2 T Mustard
2 T Brown Sugar
15 crushed Saltines
1 large egg
1/4 C Milk
Salt
Pepper

Preheat oven to 350.  In a mixing bowl add hamburger, onion, crushed saltines, egg, milk and salt / pepper to taste.  Mix with your hands.  Press into a Polish Pottery Loaf baking dish, make a small indention in the middle.  In a small bowl, mix ketchup, mustard, brown sugar - taste - if too sweet, add more mustard.  Pour over top of meatloaf, spread to edges.  Top with remaining onions.  Bake for 1 hour.  Smaznego!
