Lemon Blueberry Bread
Another favorite in our house!
1/3 C. Butter - softened
1 C. Sugar
3 T Fresh Lemon Juice
2 Eggs
1 1/2 C. Flour
1 t Baking Powder
1/2 t salt
1/2 C Milk (I use Skim)
2 T Grated Lemon Peel
1 C Fresh Blueberries
Glaze:
2 T Fresh Lemon Juice
1 /4 C Powdered Sugar
Cream together butter, sugar, lemon juice and eggs. Start adding the dry ingredients and lemon peel, alternating with the milk. Add blueberries and gently mix by hand. Pour batter into a lightly greased loaf pan.. Bake at 350 for 60 minutes or until toothpick comes out clean. Cool in pan for 10 - 15 minutes, remove from pan. Mix the glaze ingredients, drizzle over loaf. Cool on a wire rack.
