Roasted Vegetables

Roasted Vegetables are a favorite in our house.  Here is my recipe, hope you enjoy it as much as we do.

1 C. Carrots - cubed or sliced in chunks
3 C Potatoes - cubed
1 medium Onion - cut into large pieces
1 t minced Garlic (or a couple of fresh cloves)
1/4 C Extra Virgin Olive Oil
2 -3 t Jane's Crazy Mixed Up Salt (this can be found in the grocery spice aisle)

Preheat oven to 375.  Add all ingredients in large bowl to mix.  Put in baking dish (I like a casserole dish).  Place in oven uncovered for 1 to 1 1/2 hours.  Stir halfway through cooking time.    Vegetables will be slightly browned on the outside and tender on the inside.

*I also add red or green peppers if they are on hand.
