Strawberry Cottage Cheese Salad
This recipe has been one of my favorites from childhood - in our house it is just called "The Pink Salad". Enjoy
1 6 oz. Strawberry Jello
1 20 oz. can of Crushed Pineapple
1 24 oz. Cottage Cheese (Regular or Lowfat)
1 8 oz. Whipped Topping (Cool Whip etc. )
A few Mini Marshmallows - Optional
Pour the can of crushed pineapple in pan and heat to just before boiling (don't let boil), take off heat and add Strawberry Jello. Stir until dissolved, set aside for 20 minutes to cool. After it has cooled, add the whipped topping and cottage cheese. If your kids like marshmallows - add ad this time. Stir and refrigerate until set - usually 2 - 4 hours.
