Ruby Red Grapefruit Pie
This recipe is from my sister in law's mother and quite tasty!
1 C Sugar
1 C Water
3/4 C Grapefruit Juice
2 T Cornstarch
1/8 t salt
4 T Strawberry Jello
5 -6 Grapefruit - sectioned and drained
Bake 1 pie shell - let cool (I use a pre-made crrust- it is just easier!) Cook sugar, water, juice cornstarch and salt until thick. Add Jello and stir until dissolved. Let cool. Add grapefruit and pour into the baked pie crust. Chill in refrigerator for 2 hours - top with whipped topping and serve.
Note: If you like a more tart pie, just cut back on the sugar to 3/4 C.
