Fiesta Party Roll - Ups

2 8 0z packages of Cream Cheese (softened)
1 4 oz package of Fiesta Ranch Salad Dressing *
1/2 C Minced Red Pepper
1/2 C Minced Celery
1/4 C Sliced Green Onions
1/4 C Sliced Stuffed Olives

3 - 4 10" Soft Tortillas

In a mixing bowl, beat cream cheese and dressing mix until smooth.  Add red peppers, celery, onions and olives, mix well.  Spread about 3/4 C on each tortilla.  Roll up tightly, wrap in plastic wrap.  Refrigerate for at least 2 hours or overnight.  Slice into 1/2" pieces. 

* if you cannot find Fiesta Ranch Salad Dressing mix, use regular Ranch Salad Dressing mix and add 1/2 t of Cayenne Pepper (more or less depending on taste)
