Banana Bread Recipe

2 C. Sugar                               4 Banana’s
4 eggs                                       2 C + 2 T Flour
1/2 C oil                                   1 tsp. salt
1/2 C applesauce                   2 tsp. soda
Cream sugar and eggs, then add oil and applesauce, mix well.  Add 4 banana’s, mix.  Start adding dry ingredients slowly—flour, soda & salt.  Mix well.  I add 1/2—1 tsp. of cinnamon too—(it smells wonderful in the oven!)
Pour into 2 loaf pans and bake for 50—55 minutes at 350 degrees.
Enjoy!  Leah Derewicz—Owner Peacock Pottery

I love banana bread, its always best if you can leave your bananas to go black - they'll keep a bit longer in the fridge but the blacker they are the more flavour they have!
